Learn to make authentic Thai Green Curry from scratch! This fragrant, creamy curry is packed with vegetables and your choice of protein. Perfect with jasmine rice.
Ingredients:
- 400ml coconut milk
- 3 tbsp green curry paste
- 500g chicken breast, sliced
- 200g Thai eggplant
- 100g bamboo shoots
- 2 kaffir lime leaves
- 1 tbsp fish sauce
- 1 tsp palm sugar
- Fresh Thai basil
Steps:
- Heat thick coconut cream and fry curry paste
- Add chicken and cook until done
- Add remaining coconut milk and bring to simmer
- Add vegetables and cook until tender
- Season with fish sauce and palm sugar
- Add kaffir lime leaves and basil before serving
